Babylon is a sprawling Middle Eastern inspired 1200sqm restaurant and bar, located on the Westfield Sydney rooftop space in the CBD.
Occupying more than half of the rooftop, Babylon includes a 216-seat restaurant, two large bars, a wood-fired kitchen, indoor/outdoor dining, a large outdoor terrace, multiple private and semi-private dining spaces and an overall capacity of 800.
Head Chef Arman Uz (Jaaks Dining, Flanagans Dining Room, Efendy) leads the kitchen and has developed a menu inspired by the rich and flavourful Levantine cuisine of the Middle East and Eastern Mediterranean. The shared menu is split into flora, fauna and ocean with many dishes cooked over wood and charcoal on a custom-built three metre-long Mangal (Turkish grill) and two rotisseries. Signature dishes include char-grilled cabbage kebab with coriander, lime and Aleppo chilli; raki-infused kingfish with fennel, plum and caviar; Ali Nazki (Adana style kebab) with eggplant, yoghurt and burnt butter; Hunkar Begendi with 72hr slow-cooked wagyu trip-tip, smoked eggplant puree and mushroom.
The drinks list, crafted by Bar Manager David Nutting (Restaurant Hubert, Eau de Vie, Miss Peaches, Gowings Bar and Grill), features signature cocktails with a Middle Eastern influence and a 200+ whisky offering while the wine menu, includes a hand-picked selection of almost 300 bottles of Old World and New World wines
The interiors have been inspired by the once-thriving metropolis Babylon was, as well as the Hanging Gardens of Babylon, one of the Seven Wonders of the Ancient World. The diagram for the space has been derived from a series of adjoining buildings and rooms, bound by a laneway and leading you through to an outdoor terrace framed with abundant greenery. Natural course elements and timber will be juxtaposed against silky and velvety upholstery, and each space will provide a different drinking or dining experience, full of little moments.
