Q1: Tell us about North Lakes Quality Meats and how you got started as a butcher?
I began working in a butcher shop in 1974 and would clean the store after school. I then went on to do an apprenticeship at Alderly Tender Cuts for 6 years before I bought that shop in 1993. In 2009 we relocated to Arana Hills and in 2016 we won best butcher shop in Queensland. I went on to buy a second store in Newmarket and eventually sold both of these to enjoy some time off. When I saw this space become available, I jumped at the opportunity and have never looked back.

Q2: Who makes up your North Lakes team?
We have five butchers - Mal, Jacob, Rodney, Brad and Nathan plus our two sales assistants Kassie and Maddie. We also employ a few young locals to help out after school.

Q3. Tell us what is unique to your store?
Our team prepare all cuts of meat on site so they go in the window as fresh as possible. We supply grass-fed beef, free range chicken and Tasmanian pasture-fed lamb. We also have a great range of dry aged beef, sauces, rubs and spices.

Q4: What is your most asked question?
We are often asked where we source our meat from. These days we can actually trace a lot of our meats back to where it originates from. We love having this knowledge and being able to provide this information to our customers.

Q5: What is your best tip?
Don't be afraid to ask! We don't mind if a customer only wants two sausages or a small quantity of meat. We are here for our customers and want you to leave happy.
