Delicious meal for the family under $20!
Chef Carmel is back in the kitchen, taking on the under $20 budget challenge with a flavour-packed favourite — Beef Kofta Wraps. All ingredients were sourced right here at North Lakes Quality Meats and Coles, making this recipe both affordable and easy to recreate at home.
Serves: 4 people
Ingredients:
- 500g beef mince
- 1 brown onion, finely chopped
- ½ bunch flat-leaf parsley, chopped
- 2 tbsp Mexican seasoning mix
- 1 tbsp garlic powder
- Salt and pepper to taste
Toppings:
- 1 tub tzatziki dip
- Mission souvlaki breads
- 1 Lebanese cucumber, thinly sliced
- 1 tomato, seeded and finely chopped
- 1 small red onion, thinly sliced
To Serve:
- Lemon wedges (1 lemon)
- Extra flat-leaf parsley leaves (use leftover from bunch above)
Method:
- Make the Kofta:
In a large bowl, mix together beef mince, chopped onion, parsley, seasoning, garlic powder, salt and pepper until well combined.
Divide the mixture into 8 oval-shaped koftas. Place on a tray, cover, and refrigerate for 10–15 minutes. - Cook the Kofta:
Heat a skillet or grill pan over medium-high heat. Cook koftas for 8–10 minutes, turning occasionally until browned and cooked through. Set aside. - Warm the Wraps:
Wipe out the skillet and heat each souvlaki bread for about 1 minute on each side or until lightly golden and warmed through. - Assemble the Wraps:
Spread each bread with tzatziki, top with cucumber, tomato, red onion, and 2 koftas. Add a squeeze of lemon and extra parsley if using.
Serve with remaining lemon wedges and a little more tzatziki on the side.
