Recipes by Victoria: Prawn soba noodle salad

This prawn soba noodle salad pairs juicy prawns and sweet mango with a creamy hoisin- ginger dressing. It’s light yet satisfying, comes together in minutes and makes the perfect refreshing meal for hot summer days.

Ingredients

  • 120 g dried soba noodles
  • 1 Lebanese (small) cucumber, finely sliced
  • 1 large handful rocket
  • 1 ripe mango, peeled and sliced into thin strips
  • 140 g (1 cup) frozen edamame beans, thawed
  • 2 spring onions, finely sliced
  • 300 g cooked, peeled prawns (tails intact if preferred)
  • 1 tablespoon sesame seeds (optional)
  • fresh mint leaves, to serve

Hoisin-ginger sauce

  • 2 tablespoons hoisin sauce
  • 1 tablespoon light soy sauce or tamari
  • 1 tablespoon light kewpie mayonnaise
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon hot water
  • 1 garlic clove, finely chopped
  • 1 teaspoon grated ginger

Method

  1. Cook the soba noodles according to the packet instructions, then drain and rinse under cold water. Set aside.
  2. In a small bowl, whisk together all the sauce ingredients until smooth.
  3. Assemble each bowl, starting with a base of noodles, then add the cucumber, rocket, mango, edamame and spring onion. Top with the cooked prawns.
  4. Drizzle the hoisin-ginger sauce over the top just before serving.
  5. Finish with sesame seeds (if using) and mint. Toss and enjoy!

Leftovers
Refrigerate for up to 1 day and enjoy cold or at room temperature.
