Recipe: Meatballs with sweet and sour sauce

Ingredients

From frypan to plate: 20 minutes
Serves: 4

Meatballs

  • 600gr Pre-made meatballs available from North Lakes Quality Meats
  • 1 tbsp vegetable oil
  • 1 small onion, diced
  • 1 red capsicum, diced
  • 1 cup diced tinned pineapple (reserve juice)
  • 2 spring onions, finely sliced
  • sea salt
  • lime wedges to serve

Sweet and Sour Sauce

  • ½ cup brown sugar
  • 3 tbsp white vinegar
  • 1/4 cup tomato sauce + 1 tbs chilli Sauce
  • 2 tbsp soy sauce
  • 2/3 cup pineapple juice
  • ¼ tsp Chinese five spice
  • 3 tsp corn flour mixed with 3 tbsp water (combine in a small bowl and have ready)

Method

Meatballs

  1. Heat a large non-stick frypan and add oil. Add the meatballs and cook, turning over so that they don’t burn. Allow to cook on all sides.

  2. Remove the meatballs to a plate and keep warm. Whilst the pan is still hot, add the onion and capsicum and stir-fry for 2-3 minutes, Add the pineapple and toss through the sweet and sour sauce. Stir-fry until all is combined.

  3. Return the meatballs to the sauce and combine.

  4. Drizzle the combined corn flour and water mixture a little at a time, until the right consistency is achieved.

Sweet and Sour Sauce

  1. In a bowl, add the brown sugar, vinegar, tomato sauce, soy sauce, chilli sauce, pineapple juice, and Chinese five spice.

  2. In a pot combine brown sugar, vinegar, tomato sauce, soy sauce, pineapple juice and Chinese five spice. Simmer for 2 minutes until the sugar has dissolved.

  3. Serve with hot jasmine rice and toss through the spring onions.
