1 cup self-raising flour
1 3/4 cups toasted muesli
1/2 cup sultanas
1/2 cup diced dried apricots
1/2 cup brown sugar
125g butter, melted
1 egg, lightly beaten
1 tbsp honey
1. Preheat oven to 190°C (170°C fan). Line two baking trays with baking paper.
2. Place dry ingredients in a large bowl and toss to combine. Combine butter, egg and honey, then add to the dry ingredients, mixing well.
3. To make a cookie, drop 2 tbsp of mixture onto a prepared tray, then press lightly with the back of a fork. Repeat with remaining mixture. Bake for 10–12 minutes, until golden. Let cookies cool on the trays, then store in an airtight container.
