Sesame Chicken Drumsticks with Coriander Rice

Ingredients

8 chicken drumsticks
1 cup chopped cariander, plus 1 tbsp extra grated rind and juice of 1 lime
125g cherry tomatoes, halved
1/2 red onion, thinly sliced
1 tbsp toasted sesame seeds
3/4 cup honey and soy marinade sauce
1/4 cup honey
1 1/2 jasmine rice

1. Preheat oven to 200C or 180C fan. Line a baking tray with baking paper.
2. Combine the marinade sauce and honey in a large bowl. Add chicken drumsticks and toss to coat. Place drumsticks on try, reserving marinade. Bake for 45 - 50 minutes, brushing with marinade every 20 minutes, until the drumsticks are cooked through and sticky. Scatter sesame seeds over.
3. Meanwhile, prepare the coriander rice. Cook rice in a large saucepan of boiling water according to the packet directions. Drain and place in a large bowl with the coriander, lime juice and rind and toss to combine.
4. Combine tomato, onion and extra coriander in a bowl. Serve chicken with coriander rice and tomato salad.
