Paprika and Lime Roast Chicken

1.7kg whole chicken

SUPERMARKET
finely grated rind and juice of 1 lime, plus 1 lime, cut into wedges
700g pumpkin, cut into wedges
chopped parsley, to serve
1 tbsp oil
1 tsp smoked paprika
1 cup frozen peas

1. Preheat oven to 200 C or 180 C fan. Cut chicken into 8-10 pieces and place in a large bowl. Add lime rind and juice, oil and paprika and toss to coat.

2. Place chicken in a large baking pan. Scatter lime wedges and pumpkin in pan. Bake for 45 minutes, until chicken is golden and cooked through.

3. Meanwhile, steam or microwave peas until tender. Serve chicken with a sprinkle of chopped parsley, pumpkin wedges and peas.
