They're also a great source of beta-Carotene and potassium. 41g meets the recommended daily intake of beta-Carotene in men, while 32g provides enough for women. Carotenes function as antioxidants and some, like beta-Carotene, can be converted to Vitamin A in the body. Dried Apricots may also help to prevent anaemia by increasing blood production.
