Recipe: Greek-Style Chicken Kebabs with Pita Bread Greek Salad

Serves: 6 people
Prep time: 15 minutes
Cook time: 20 minutes

Ingredients
• 1-2 tbs olive oil
• 6 Greek-style chicken kebabs (North Lakes Quality Meats)

For Serving
• Pita bread
• Tzatziki dip (store bought)
• Lemon wedges

Greek salad
• 1 large cucumber, sliced into rounds diced
• 5 Roma tomatoes, cut into wedges
• 1 green capsicum, sliced
• ½ red onion, thinly sliced
• ½ cup Kalamata olives, halved
• 200gr feta cheese, cubed
• Salt and pepper to taste

Greek salad dressing
• ⅓ cup red wine vinegar
• 1 lemon juiced
• 1 teaspoon Dijon mustard
• 2 garlic cloves minced
• ½ teaspoon dried oregano
• ¼ teaspoon salt
• ¼ teaspoon black pepper
• ½ cup olive oil

Method

  1. Greek salad - Add the cucumber, tomatoes, bell pepper, onion, olives, and feta cheese to a large mixing bowl.

  2. In a small mixing bowl, add all the dressing ingredients and mix well.

  3. Drizzle the dressing on the salad and gently stir to combine. Season with additional salt and pepper.

  4. Chicken kebabs - Preheat BBQ plate to medium heat.

  5. Brush kebab skewers with a little oil, add to BBQ plate and cook for approx. 10 mins and well seared on one side, turning occasionally, until the chicken is completely cooked on all sides. Approx. 8 more minutes.

  6. Set aside and lightly cover with alfoil.

  7. Pita Bread - Brush pita bread with a little oil and place onto a hot grill. 8. Cook until warmed through.

  8. Wrap in alfoil to keep warm until required.

Serve chicken kebabs alongside Greek salad, pita bread and accompany with tzatziki and lemon wedges.
