Satay beef with stir-fried greens & rice

SHOPPING LIST (Serves 4)

¼ Cup crunchy peanut butter

LAU PEKING
1 Tablespoon chilli sauce
1 Tablespoon kecap manis
2 Teaspoons fish sauce
2 Bunches broccolini
1 Bunch bok choy, quartered
1 Long red chilli, thinly sliced
2 Cups cooked basmati rice

CAROUSEL
1 Lime, halved
1 Tablespoon olive oil
3 Spring onion, thinly sliced
2 Garlic cloves, thinly sliced
2 Bunches broccolini

SPRINGFIELD BUTCHER
2x 200g Beef steaks (eg. porterhouse or scotch fillet)

Method:
1. Combine peanut butter, chilli sauce, kecap manis, fish sauce, juice of half the lime and two tablespoons water in a small saucepan. Simmer over medium heat until warmed and ready to serve.

  1. Heat oil in a large frying pan over medium-high heat. Add steaks and cook for 3-4 minutes each side or until done to your liking. Remove steaks from the pan and set aside to rest before slicing.

  2. Return pan to the heat. Add broccolini and bok choy and cook for 2-3 minutes or until brightly coloured and tender. Add spring onion, garlic and chilli for the last 30 seconds of cooking. If necessary, add a splash of water to assist cooking.

  3. Divide rice and stir-fried greens between serving bowls. Top with steak, drizzle over satay sauce and serve the remaining half the lime cut into wedges.
