Roasted broccolini is hands down my most favourite vegetable. It takes on a totally other life. Adding the lemon dressing improves the iron availability of green vegetables, making it a perfect side dish for vegan and vegetarian meals. The crunchy chewy garlicy croutons will knock your socks off and the honeyed walnuts might even break your heart. Filled with vitamin C, good fats, soluble fibre and flavours the whole family will enjoy.
