1 heaped tsp. coconut palm sugar or honey or coconut flower nectar
1/2 cup of berries (your choice)
1 tbsp. pure maple syrup
1/2 juice of lime or lemon (optional) if you prefer that sourness to cut through the sweetness
Mix all the dry ingredients together.
Add the wet ingredients and mix; if the mixture is a little dry, add an additional teaspoon of coconut milk at a time to get the right consistency. It should be like pouring thickened cream.
Let the mixture rest for a couple of minutes so that the baking soda activates.
Add tsp. coconut oil or grass fed butter to a fry pan on medium heat spoon mixture to desired size; generally it begins to lightly bubble when cooked, flip and repeat.
For the berry compote put the berries and maple syrup in a small saucepan on low heat; simmer for aprroximately 5 minutes or until the berries begin to soften & form a syrup. Add the lime/lemon juice just before serving (again this is optional).
