1. To make the coronation chicken, in a large bowl, combine the mayonnaise, curry powder, raisins or sultanas, lemon zest and juice, orange zest, paprika and turmeric. Add the chopped chicken and season with salt and pepper.
2. To make the cheat’s flatbread, brush the pizza bases with the butter, drizzle with the olive oil and dust with the cumin and some salt. Cook the pizza bases in a hot dry frying pan until golden on each side.
3. Combine the yoghurt with the lemon juice and season with salt and pepper.
4. Slice each cheat’s flatbread into quarters and spoon on even amounts of coronation chicken. Finish with a small spoonful of yoghurt, a sprinkle of almonds and a few micro herbs.
