1. Place western star spreadable original soft, chipotle, lime rind, lime juice and coriander in a bowl and stir until well combined. Spoon into a serving bowl.
2. Heat a barbecue hotplate or frying pan over a medium heat. When hot, add extra western star spreadable original soft and oil. When the spreadable has melted, add prawns and cook for 8-10 minutes, turning occasionally, or until cooked.
3. Place prawns on a platter topped with dollops of the flavoured spreadable mixture while hot. Serve prawns with halved, toasted brioche buns, shredded lettuce, avocado, tomato, lime cheeks and remaining spreadable mixture.
