1. Cover vermicelli in boiling water and leave aside to soften. In a nonstick frying pan over medium high heat, add olive oil, ginger, chilli, garlic and chicken mince. Fry off ingredients until chicken has browned slightly and is cooked through, season with salt & pepper and set aside.
2. Combine all dressing ingredients in a bowl and whisk to combine.
3. Preheat a griddle pan on medium high heat. Slice the Turkish roll in half, lightly spray the inside of the roll with olive oil spray and place on griddle pan and toast until light golden brown.
4. Starting with avocado on the base of the bun, and working your way down the list build your sandwich with all the ingredients, top with chicken mix and dress liberally, place bun lid on top and serve.
