Christmas Feasting Guide | Perfect Pork

‘Tis the season for entertaining…

The silly season is upon us which means it’s time for wining, dining and entertaining all of our nearest and dearest. Rather than reaching for the roast turkey and cranberry sauce straight up, we’re exploring the delicious, festive goodness of juicy, tender pork.

Apple, sage and prosciutto-stuffed pork

If you're a lover of the classic roast pork and apple sauce, then try this modern, deconstructed twist. Lightly season a cut of fresh pork then layer prosciutto, finely diced green apple, minced onion and garlic and finely chopped sage before rolling and tying with kitchen string. Sear on a skillet for 6 minutes, then oven bake for 20 minutes. Mmmmm mouth-watering goodness!

Cider-glazed pork

Fish is often beer battered and steak is served with a red wine jus, so it's about time we look at pork differently! For this recipe, you'll need to sear a high-quality cut of pork in a butter and oil mixture to give it a golden-brown crust, then slide it into an oven-proof dish for a 20-minute roasting. Next, you'll need to combine and heat apple cider, apple cider vinegar and wholegrain Dijon mustard in a frying pan to spoon over the pork as it continues to simmer in the pan. Serve, drizzled with more delicious sauce, and enjoy.

Cracking crackling

Once you have selected a fresh, high quality cut of pork deeply score the rind (careful not to cut into the meat). Ideally you would store this in the fridge overnight, but if you're pressed for time, then pop your pork straight onto a rack in the sink and pour a jug of boiling water over the rind.

Dry thoroughly then rub with vegetable oil and salt, deeply penetrating the rind.

Bake at 240C until you can see that glorious crackle coming to life (usually around 50 minutes for an average size roast).

Turn the oven down to 180C and cook for a further 30-35 minutes per kilo.

Once cooked, allow to rest for 10 minutes then slice, serve and sink your teeth into all of that delicious crackling atop of your juicy, tender pork roast!
