5 minutes with the head chef of Kamikaze Teppanyaki
Kamikaze offers a modern, vibrant and downright fun take on Japanese food, bringing the ultimate foodie experience in fine dining. To celebrate its recent opening, we had a chat with Kamikaze’s Head Chef Eddie Cheng.
So Eddie, can you tell us a bit about your culinary background? How did you become Head Chef of Kamikaze?
I have been in this industry for more than 12 years since the first Kamikaze branch opened. Teppanyaki culinary experiences have always been my passion ever since I was a junior employee in my early years. The expansion of Kamikaze over the years has broadened my career aims and I decided to take on the challenge to be Head Chef of Kamikaze. My aim is to bring out new flavours and innovations in our teppanyaki experiences for all guests.
What makes Kamikaze unique from other restaurants?
Kamikaze is not just your average teppanyaki restaurant. We focus on delivering a funky atmosphere with friendly service and a variety of mixed Japanese cuisines.
What are your top picks on the menu Eddie?
You have to try our Kamikaze Super Supreme Set, which comes with fillet mignon, prawns, scallops, salmon, Moreton bay bugs, tuna, squid and baby octopus – it’s fantastic. If you’re not quite that hungry, go for the Karaage Bento, Pork Ramen or Prawn Tempura Udon. These are our best-sellers at the moment and the flavours are absolutely delicious.
In terms of my personal favourites, I would always go for a steak option or fresh salmon set. All of our ramens are incredible too.
Are there any seasonal highlights this Summer?
Our new Char Siu Pork Ramen has an amazing pork broth which blends well with the strings of ramen and full-of-flavour char siu pork slices. I’d definitely suggest trying that this Summer. Also, at the moment you can experience teppanyaki starting from just $14.95 if you stop by between 11am-4:30pm.
