WHAT TO BUY
3 garlic cloves, chopped
1 tbsp dried oregano
juice of 2 lemons
watercress sprigs
1 x size 18 chicken from Red Lea Chickens
2 tbsp olive oil
WHAT TO DO
1. Wash chicken and pat dry with kitchen paper. Using a sharp knife or poultry shears, cut the chicken down the back. Using the heel of your hand, press chicken down flat. Remove backbone and rib cage.
2. Place in a large shallow dish, skin side up. Rub oil into skin and season well. Scatter over garlic and oregano and pour over lemon juice. Cover and refrigerate for 2 hrs, to marinate.
3. Preheat a hooded barbecue on medium. Cook chicken, lid closed, for 15 mins each side, until golden and cooked through.
4. Cut into pieces and serve on watercress.
