3 slices thick white bread, crusts removed

1/2 cup grated parmesan
GREENGROCER
1 small onion, chopped
chopped parsley, to serve (optional)

2 tbsp olive oil
2 x 400g cans chopped tomatoes
1 tbsp tomato paste
light sour cream
1. Heat 1 tbsp of oil in a saucepan over medium heat. Cook onion for 5 minutes, until soft. Add tomatoes, 1 cup of water and tomato paste. Season well. Simmer for 5 minutes. Blend with a hand blender, until smooth.
2. Meanwhile, cut each slice of bread into 3 fingers. Brush with remaining oil and place on a baking tray. Place under a preheated grill and cook, turning, until golden. Scatter cheese over the bread and grill for another 1-2 minutes, until cheese is golden.
3. Serve soup in bowls with a spoonful of light sour cream and a sprinkle of parsley, if using, with cheese sticks on the side.
