Ham & Tomato Mini Quiche

50g shaved ham, chopped

125g cherry tomatoes, halved

2 pieces lavash bread
2 eggs
1/4 cup cream

1. Preheat oven to 180 C or 160 C fan. Spray a cupcake pan with oil.

2. Cut six 8cm squares from each piece of lavash bread. Lay each square in a cupcake hole in the prepared pan, pressing down to form a cup. Sprinkle ham and tomato in each lavash case.

3. Whisk together eggs and cream. Carefully pour or spoon into the lavash cases. Bake for 12 minutes, until set and golden. Serve warm or at room temperature.
