Ingredients
4cm piece ginger, peeled and shredded
3 garlic cloves, chopped
3 small red chillies, chopped
150g snow peas, halved
1 bunch gai lan (chinese broccoli), washed, cut into 7cm lengths
3 green onions (shallots), cut into 3cm lengths
1 carrot, thinly sliced
Shredded green onion, to serve
1/2 cup ready made satay sauce
165ml can coconut milk
1/4 cup crunchy peanut butter
1 tbsp peanut oil
Rice, steamed, to serve
1. To make satay sauce, combine satay, coconut milk and peanut butter in a small saucepan. Stir over low heat until smooth and well combined.
2. Heat oil in large frying pan or wok over hgih ehat. Cook ginger, garlic and chilli for 1 - 2 minutes, until fragrant. Add snow peas, gai lan, onion, carrot and 1/4 cup of water. Stir fry for 3 - 5 minutes, until tender.
3. Drizzle stir fried vegetables with satay sauce and serve with steamed rice topped with shredded green onion.
